Things don't need to be fancy to enjoy mushrooms, sometimes the classics are the best!
Ingredients
- Fresh oyster mushrooms
- Fresh spinach, chopped
- Eggs
- Milk or cream
- Gruyere cheese, grated
- Pie crust, make your own or just grab a packet from the supermarket!
- Salt, pepper, and nutmeg
Preparation
- Sauté pink oyster mushrooms and spinach until wilted.
- Whisk together eggs, milk or cream, salt, pepper, and a pinch of nutmeg.
- Mix in the sautéed mushrooms and spinach, and pour into a pie crust.
- Top with grated Gruyere cheese and bake until the quiche is set and golden brown.
